Warm, Gooey Pan Cookie

This cookie will definitely be your new addiction, it is gooey and easy to make. If you don’t have a skillet, you can make them in a ceramic dish or a baking tin but the skillet is great because it gets really hot and leaves the cookies with a crispy outside. Melt 55 grams of butter then add it to a mixing bowl, to that add 65 grams of soft light brown sugar and give that a good stir just to combine it all then add in half an egg( break the egg in a small bowl, beat it then add half of it) into the butter and sugar mixture and stir it in to combine it.

For the dry ingredients, you will add in 75 grams of plain flour along with the baking powder and bicarbonate soda and salt. Stir everything in until just combined then add vanilla extract for flavouring and give that a good stir through. The final ingredient is the chcolate, you can use chcolate chips of chunks of chocolate bars, pretzel or nuts.

Mix half of the 75 grams of chcolate and fold it in the batter. Get the skillet and put all the batter in it, give it a little smush around just to even it a little bit then sprinkle teh top with the remaining chcolate chips or chunks of chocolate bars. Bake it in a preheated 350 degrees Fahrenheit oven for 10 minutes, that way the cookies will come out gooey but if you want it further cookies then bake it for 14 to 15 minutes and it will be nice and golden on the outside.

This cookie is best served warm and gooey with loads of ice cream on top. If you are using a big pan like an 8-inch skillet, double the recipe for the chcolate to fill the pan. Enjoy.

  • 55g unsalted butter
  • 65g light Brown Sugar
  • 1/2 an Egg
  • 75g plain flour
  • 1/4 tsp Salt
  • 1/4 tsp baking powder
  • 1/8 tsp bicarbonate of Soda
  • 1/2 tsp vanilla Extract
  • 75g Chocolate Chips
  • Sea Salt for topping
