Walnut Chocolate Cake

This walnut chocolate cake is so simple anyone can make it at home. It is super moist and fudgy and you only need about 10 minutes to prepare. Into a mixing bowl, add granulated sugar and vegetable oil then whisk them together to combine for about a minute. Add buttermilk, one egg and a teaspoon of vanilla essence then whisk that for about a minute.

Sift in the dry ingredients; all-purpose flour, cocoa powder, baking powder, baking soda and salt. Sifting will help make a smooth batter with no lumps in the cake so make sure the dry ingredients are sifted in the batter. Once you are done sifting, use a spatula to mix everything together until you have a smooth batter.

In a small saucepan, mix warm water with coffee granules then add it to the batter, this will enhance the flavour of the chocolate, mix it n until you have a smooth batter then add walnuts into the batter and fold it in just to make sure the walnuts are evenly distributed in the batter. Grease and line the baking tin with parchment paper then pour in the batter and top with more nuts. Bake in the preheated 350 degrees Fahrenheit/ 180C oven for 40 to 45 minutes or until a skewer inserted in the centre comes out clean.

If you want more chocolate flavour, you can prepare a chocolate ganache and top it once the cake is baked and cooled. Into a small bowl, add whipping cream and dark chocolate then pop it in the microwave for about 5 minutes, removing the bowl and stirring the mixture after every minute until you have a silky smooth chocolate ganache. Let the ganache chill for one hour at room temperature before glazing the cake. Serve the cake and enjoy.

Ingredients;

  • 1 cup (200g/ 7.1Oz) sugar
  • 1/2 cup (109ml) vegetable oil
  • 1 cup (115g/ 4Oz) walnuts
  • 1/2 cup (118ml) buttermilk(mix 1/2cup milk with 1 tbsp fresh lemon juice)
  • 1 egg
  • 1 tsp vanilla essence
  • 1½ cups (180g/ 6.3Oz) all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4tsp salt
  • Coffee water(mix 1/2cup warm water with 1tbsp coffee granules)

For the ganache: (Optional) 

  • 1 cup (170g/ 6Oz) dark chocolate, chopped
  • 1 cup (250ml) whipped cream
