BACON WRAPPED CHICKEN MEATLOAF

INGREDIENTS:

1 kg (2 pounds) ground chicken

1 tsp salt

1/2 tsp black pepper

2 tsp garlic powder

3 tbs pdried italian herbs

1 egg

1/4 cup breadcrumbs

2 tbsp milk

7 slices cheese

12 slices ham

2 onions

20-30 strips bacon

METHOD :

1. Combine ground chicken with salt, pepper, garlic powder and dried herbs. Add breadcrumbs, egg and milk, then mix well.

2. Spread minced meat mixture on top of a plastic wrap, forming a rectangular shape 30×40 cm.

3. Top with cheese slices, leaving a 10 cm border on one of the shorter ends.

4. Add the ham slices.

5. Add the onions.

6. Roll meat with filling tightly, wrap in plastic and let sit in the fridge for 1 hour.

7. Layout bacon strips on top of another two sheets of plastic wrap. Unwrap chilled roll and cover it with bacon as shown on the video.

8. Cover with baking paper and bake at 200°C/400°F for 40 minutes, then remove paper and brown meat roll for 15 minutes with convection on.

9. Enjoy your bacon wrapped chicken meatloaf.
