No Oven Red Velvet Cake

This delicious red velvet cake is made in the microwave and it’s super easy. It is fluffy and prepared only in 10 minutes. Add milk in a jar together with a spoonful of lemon juice then set aside for 15 minutes. If you have buttermilk, you can use it instead of adding lemon to the milk. In a small mixing bowl, add 50 grams of chocolate chunks and microwave it at intervals of 30 minutes while stirring in between until the chocolate is melted.

Into a mixing bowl add sugar, a teaspoon of vanilla essence, 3 eggs and vegetable oil. Use a whisk to mix everything together until incorporated then add the melted chocolate and the milk lemon mixture. If you have buttermilk, add at this point. Add a little red food colour that will give the cake its colour. Mix everything well until you have a smooth mixture then sift in cake flour, baking powder and a pinch of salt.

Mix the dry ingredients in until you have a smooth cake batter. Pour the batter into a circular greased cake mould that is microwavable so the cake doesn’t stick in the mould. Cook the cake in the microwave at medium power for 5 minutes then put the microwave at maximum power and let it cook for 2 minutes.

After this, the surface of the cake will still be raw so you will cook it at maximum power at an interval of 1 minute until you see that the top is fully baked, this should take around 7 minutes. Insert a toothpick/ skewer in the centre of the cake to know if your cake is fully baked. Once baked, let the cake sit in the mould for about 15 minutes then unmold the cake onto a plate.

To make the frosting, add 80 grams of unsalted butter to a medium-sized mixing bowl together with 70 grams of icing sugar and mix them together until smooth and incorporated. Add 70 grams of cream cheese and mix it in for a minute. Dollop the cream on top of the completely cooled cake, finish it off with red sprinkled and serve.

Ingredients;

  • 125 ml of whole milk (1/2 cup)
  • 1 tablespoon of lemon juice (15 ml)
  • 50 g of chocolate 120 g of sugar (2/3 cup)
  • 1 teaspoon of vanilla sugar or vanilla essence
  • 3 eggs
  • 120 ml sunflower oil or mild olive oil (1/2 cup)
  • Red food colouring
  • 150 g cake flour (1 cup +1/4)
  • 1 tbsp +1/2  teaspoons baking powder
  • 1 pinch of salt

Frosting;

  • 80 g butter (5 tablespoons)
  • 70 g icing sugar (4 tablespoons and 1/2)
  • 70 g cream cheese (4 tablespoons and 1/2)
  • Decorate to taste
