How to Make Delicious Strawberry Cupcakes

To make your very own strawberry cupcakes, start by preparing 1 1/2 cups of flour. Sift it well and keep aside. Other ingredients you will need are baking powder, salt, milk, vanilla extract, unsalted butter, and eggs. Pre-heat your oven to 175°C.

Using a food processor, puree enough strawberries to yield 1/3 cup of puree. Then, whisk together flour, 1 teaspoon of baking powder and 1/4 teaspoon of salt in a small bowl. Using an electric mixer, beat the butter on medium-high until light and fluffy. Carefully add some sugar and continue to beat. Fold in 1 egg and 2 egg whites. Gradually reduce the mixer speed to medium and finally to low. Add half of the flour mixture and mix well. Maintain your mixer speed at low. Next, add the liquid mixture and mix well. Slowly add the remaining flour mixture and mix until the batter is smooth. During this process, remember do not over-mix your batter or your cupcakes will be too firm.

Pour the batter into cupcake molds lined with paper liners. Remember not to overfill them, only fill 2/3 of the liners. Put the cupcake batter into the pre-heated oven and bake for 22-25 minutes. Remove the cupcakes from the oven and let them cool for a while at room temperature. Your delicious strawberry cupcakes are ready to serve.
