Lemons have the most wonderful, refreshing taste. That is, they do if you can get past the mouth-puckering sourness. These recipes will provide the lemon flavor without the tang.





Lemon Layers
1 1/2 cups flour
1 1/2 sticks oleo
2 8 ounce packages cream cheese
2 cups confection sugar
3 cups whipped topping
3 regular size boxes instant lemon pudding
5 cups of milk
Mix the flour and oleo together and press into the bottom of a 9×13 pan. Bake for 15 minutes at 375 degrees. Let cool.
Cream together the confection sugar and cream cheese using a mixer. Add 2 cups of the whipped topping and continue mixing until well blended. Spread this mixture on cooled crust.
Empty the 3 boxes of lemon instant pudding into a large mixing bowl and add the 5 cups milk. Do not follow the directions provided on the pudding box. Pour this mixture over the second layer and top with the remaining cup of whipped topping. Chill thoroughly before serving.
Easy Cheesy Lemon Bars
1 package lemon cake mix
1/2 cup oleo, melted
1 egg
Combine cake mix, oleo, and egg in a medium bowl and mix well. Press the mixture into the bottom of a greased 9×13 pan and bake 3 to 5 minutes.
Topping:
1 package lemon frosting mix
1 8 ounces package cream cheese, softened
2 eggs
Using a mixer, blend the cream cheese and frosting reserving 1/4 cup for the frosting. Add the eggs to the remaining cheese mixture and spread over the first layer.
Bake for 30 to 40 minutes at 350 degrees. Cool and frost with the reserved mixture of lemon frosting and cream cheese.
